Happy Thanksgiving and welcome to Park Avenue Properties’ Thanksgiving Special! We’re taking a break from our Winter Series to celebrate the harvest and talk Turkey Day.
We at Park Avenue Properties love getting into the holiday spirit. Our annual Thanksgiving potluck is an event we all look forward to the week before Thanksgiving. This is our chance to share our favorite holiday recipes and celebrate the season as a team. This year, we had some delicious food come through our doors, and since you’re a part of the Park Avenue Properties family, we wanted to share some of our festive fall deliciousness with you!

Denise’s Roasted Potatoes
4 Lbs Russet potatoes, washed and cut into bite size pieces
Vegetable oil, enough to fully coat potatoes
1- 1.5 packets Lipton Onion Soup mix
Paprika, to taste
Garlic powder, to taste
Preheat oven to 375ºF. Place cut potatoes in a roasting pan and coat fully with vegetable oil. Sprinkle with one packet of Lipton Onion Soup mix (if you like a lot of flavor you may use an extra half of a packet) and paprika, garlic powder and parsley flakes to taste. Cover and cook in preheated oven for one hour. After an hour, uncover and cook until brown and tender.
Anna’s Fall Carrot Cake Whoopie Pies
Carrot Cake Ingredients:
1 pkg. (2-layer size) spice cake mix or your favorite Spice/Carrot Cake Recipe
½ cup applesauce
1 cup milk
2 cups shredded carrots
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup confectioners sugar
4 to 6 oz milk
1tsb orange extract (optional)
Preheat oven to 350ºF. Prepare cake batter, mixing spice cake, eggs, applesauce and milk on low for 30 sec, then on mid for 2 mins. Mix in carrots. Spoon in batter to each cavity ⅔ of the way full. Bake for 10 minutes or until toothpick inserted in centers comes out almost clean. Cool on baking sheets 2 minutes. Remove to wire racks; cool completely. Repeat until all the batter is gone.
Beat cream cheese, confectioners sugar and milk in medium bowl with mixer until blended. If mixture is too wet slowly add more sugar or if too dry add milk in small splashes. Spoon about 1 TBSP between two pies, press together firmly and serve.
